Kids Say the Darnest Things

I wanted to write this before I forget it. Zach and Preston had gone to Grandma and Grandpa Madsen for the afternoon. They took them to Wendys. Of course Zach got nuggets and some chocolate milk to go with it. As he is drinking his chocolate milk, Grandma is talking and saying" I can buy Grandpa Dan a whole gallon of chocolate milk and he can drink it all in one day." Preston then says"Well my dad can drink a whole gallon of regular milk in one day." Zach, with such a serious face then says, "Well my mom can drink a whole gallon of pop(namely dr.pepper) all in one day." Everyone starts laughing and he is not so sure as to why because his mom really drinks a WHOLE LOT!!!


So needless to say, I am cutting down on the soda. Really this time. And no I don't really drink a whole gallon(although I probably could). Aren't kids funny? Be careful what you say and do!

Great Recipe

I made this last night for dinner

It is called Tilapia with Citrus Bagna Cauda. SOOOO yummy! Everyone except Zach liked it. I don't think Zach likes any fish. I did not add the anchovies but reviews say it gives it much more flavor but I thought it was great without. If anyone tries it, tell me what you think. :)


Ingredients
3 tablespoons unsalted butter
2 tablespoons extra-virgin olive oil, plus 2 teaspoons
4 anchovy fillets, minced
1 1/2 teaspoons minced garlic
2 tablespoons orange juice
2 tablespoon thinly sliced fresh basil leaves
1 teaspoon lemon zest
1 teaspoon orange zest
6 (6-ounce) skinless tilapia fillets
Salt and freshly ground pepper
Directions
Cook the butter and 2 tablespoons extra-virgin olive oil in a heavy medium saucepan over low to medium heat just until the butter is melted, stirring frequently. Add the anchovies and stir until the anchovies dissolve, about 2 minutes. Add the garlic and cook just until fragrant, about 30 seconds. Remove from the heat. Stir in the orange juice, basil, and lemon and orange zests. Season the sauce, to taste, with salt.
The bagna cauda sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm before using.
Meanwhile, preheat oven to 200 degrees F.
Sprinkle the fish with salt and pepper and brush both sides of the fish with remaining 2 teaspoons extra-virgin olive oil. Working in 2 batches, fry the fish until just opaque in center, about 3 minutes per side. Transfer fish to platter. Cover with foil and keep warm in the oven while cooking the second batch of fish. Drizzle the sauce over and around the fish and serve.

Finally!!!!

I'm not one for bragging or showing off (I leave that up to Allen) but I figured this is my one time I will. This is our newest purchase and Allen is so excited! He has been waiting for the right time to get one and thanks to new friends and acquaintances he was able to get one at a great deal I might add! We really didn't want to give up our trailer and our Expediton just couldn't do it anymore. I just can't wait for those payments. We have been free from car payments for a while now. Good things can't last forever! Honey just so you know you look really HOT in it too! Love you!

Sin City Vacation

We took a much needed, quick(,too quick) vacation to Las Vegas a week ago. It was supposed to be St. George but we could not get a condo-they were booked for quite a while. I know you are thinking Vegas with the kids.. but the kids had never seen it and Allen and I had not been there for a long time. It really was so fun. There is so much to see and do and three days -well one full day was not nearly enough. We stayed here and went to the Adventuredome which is an inside Lagoon. The kids loved that. Preston is a nut and went on the Canyon Blaster like seven times-which is like the Colossus ride at Lagoon only more loops and twists. I took more video than pictures- I love my new camcorder and I don't know how to download those yet.


Spongebob the ride- It was ok.


This was like the rocket ride at Lagoon.

Of course we had to ride the train for Zach. This is great that he has a smile. A little about Zach, he is so emotionless on rides. He doesn't cry, smile, laugh, scream but he always seems to enjoy and want to go back for more. Preston has so much enthusiasm-he screams, he laughs but Zach it just nothing. I have video and it is so funny to watch.




After the Canyon Blaster and back for more. If you noticed I am not in a whole lot of pictures when we are riding rides. Holy cow! I went on one and thought I was going to die. I hate to be a party pooper but geez. I better not poop out when we go to Disneyland. Preston was calling me a baby the whole time. I could really slap him.



This was at the Mirage. It was in front where we watched the Volcano show. We also watched the Treasure Island show which was also cool.
